The shop with "やきとり" written in hiragana on the door is more civilian. You may eat pork skewers, beef skewers, and horse meat skewers in the shop, with various seasonings and grilling methods. It's actually spicy miso grilled pork head. In Hokkaido Muroran, it refers to skewers of pork and onions with mustard. After grilling, it can be dipped in yellow mustard and eaten. In Imabari, Ehime Prefecture, "やきとり" simply refers to chicken teppanyaki.
